Amaranth Halvah

Source: Wild Greens and Salads, by Christopher Nyerges, 1982

  • 1 cup amaranth seed
  • honey

Grind one cup of amaranth seeds to a fine powder. This can be done with a primitive stone grinder or a modern kitchen blender. Mix with honey until you reach a halvah-like consistency. You can form this into balls and roll the balls in the whole amaranth seeds.

This is a very tasty trail snack. Works best with the white amaranth seeds.
