Apple, Bee Balm and Sunflower Crisp

  • 2 1/2 cups finely chopped dried apples
  • 1 1/2 cups warm water
  • 1 tablespoon lemon juice
  • 1 cup hulled sunflower seeds, toasted
  • 1 cup fine yellow cornmeal
  • 1/3 cup plus 1 tablespoon water
  • 1/4 cup dried bee balm (Monarda) petals
  • 1/3 cup honey

Combine apples, 1 1/2 cups water and lemon juice. Allow to stand for 45 min utes. Whirl sunflower seeds in a blender till fine. Add cornmeal, then wate r. Mix just to blend. Reserve 2 tablespoons of the mixture for topping. Pre ss remainder of mixture into the bottom of a 6 1/2 x 10 inch cake pan. Spre ad apple mixture on crust and sprinkle with bee balm petals. Drizzle honey over all. Sprinkle reserved seed mixture over top. Bake at 350F for 25 -30 minutes. Serve slightly warm.
