Banana Nut Bread

This is the very first recipe that my grandmother was given when she moved to the Canal Zone in 1942.

  • 7/8 cup sugar
  • 2 eggs
  • 1/2 cup shortening or salad oil
  • 3 medium ripe bananas, mashed
  • 2 tsp. lemon juice
  • 2 scant cups flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 rounded tsp. baking powder
  • 1/2 cup nuts, chopped

Cream together sugar, eggs and oil/shortening. Add 3 medium sized ripe bananas, mashed, and 2 tsp. lemon juice. Mix well. Add 2 scant cups flour mixed with 1 tsp. soda, 1/4 tsp. salt, and 1 rounded tsp. baking powder. Bake in a loaf pan 45 minutes in a moderate oven, 350 deg. Turn out on a rack to cool immediately. Wrap and refrigerate until well chilled before cutting. It freezes well, and improves if about 1/2 cup of chopped nuts are incorporated in the batter at the last step.
